Go Green Go!!!!. Lets go green today.. Before my college days, my mom used to make the red spinach very often. I like the color of it, specially when you mix it with the curd rice.<br />
<br />
So after coming here, i don't feel like buying this green spinach, because i love the red spinach very much. One day one of my friend was on the phone and she told me that she is making spinach poriyal. That day i was thinking Ohhhh even in America our Tamilians are eating green vegetables. Ohh let me buy some this week when i go for shopping. That's how i got this green spinach before 7 years back. That day i got the Spinach bunch and cleaned it 5 times i think. Then i cooked it and ate it. Hmmm what to say even after all this wash, i was munching on sand while i had my lunch. But ow i always buy the washed spinach in the pack or the frozen spinach.<br />

Now that's the easiest poriyal which i love to make. Because the one that i buy from the nearby Farmers market is "triple washed". So i don't have to wash it and look for sand. Ooooh i don't like munching on sand in my spinach. I make spinach with paruppu and this poriyal at home. Sometimes i even add spinach to the chicken gravy to make healthy chicken gravy.<br />

Here comes the recipe to make it typical Nagercoil style with some coconut.<br />

You will need:<br />

<li>1 pack of spinach (rough chopped)</li>
<li>1 big onion finely chopped</li>
<li>1 tsp oil</li>
<li>1/2 tsp mustard seeds</li>
<li>salt to taste</li>
</ul>

<li>1/2 cup grated coconut</li>
<li>1 tsp cumin powder</li>
<li>1 gloves of garlic</li>
<li>2 pinch of LG powder-- Asofoetida powder</li>
<li>pinch of turmeic powder</li>
<li>1 green chilli (Can add 1 more if you like spicy dish)</li>

Heat a pan and add oil to the pan. When the oil becomes hot add the mustard seeds and wait for it to splutter. When you hear the spluttering sound just add the chopped onions.</div>

When the onions are getting fried in the oil, you can go ahead and give a rough chop to the spinach. Saute the onions just for 3 mins and add the chopped spinach to it and continue to saute it, untill it looks like this.<br />

Now add the ingredients under "To Grind" in your small mixie jar and dry grind it coarsely. You can even use the Pulse option. DO NOT ADD WATER TO IT. </div>

Sometimes even our perspective varies the way we see things. We can simply look at the Facts of a situation that we are going through Alone, or we can even see the Facts in the light of the Truth of Gods word.<br />

There is no promise anywhere in the Bible which says that while we are in these earthly bodies, we will not face any trouble. But we do have a beautiful promise from God, that He will give us peace in the midst of the trouble. May<br />

Isaiah 26 verse 3, we read that the quiet confidence is called Perfect peace. But my dear friend "My God's ways are higher than your ways". May be the "Thing" has crowded your whole life. But we have a God who can help us to come of the problem that you are going through.<br />

Two horses were living on a rural field. From a distance, the horses look alike. But if you near the horse, you will notice something quite amazing. Looking closer to one of the horse will disclose that he is blind. His owner made a good home for him to stay even thou the horse is blind.<br />

If you are near by the blind horse, you will hear the sound of a bell. The bell sound comes from the baby horse in the field. Attached to her halter is a small bell. The bell lets her blind friend know where she is, so he can follow her.<br />

The blind horse always listens to the bell sound and follow that sound, trusting that she will not lead him astray.<br />
<br />
When the baby horse returns to the shelter each evening, she stops occasionally and looks back. Making sure her friend isn't too far behind to hear the sound of the bell.<br />

Like the owners of these two horses, God does not throw us away just because we are not perfect or because we have lots of challenges and problems . He watches over us. He even brings others into our lives to help us when we are in a need.<br />

Many of the times, we are the blind horse being guided by the little ringing bell of those whom God places in our lives. At other times we are the guide horse, helping others to see. <br />

After i published my last post, i got lots of phone calls and messages from my friends asking me to update the blog very often with more recipes. So here you go friends. Hope you will like it, love it and share it.. He he he.<br />

Last Saturday my neighbor gave me the Restaurant depot card for us to visit that store. With lots of curiosity , our family went to that store just to see what do they really carry To my surprise, we found yummy fruits, vegetables, all kinds of meat and all that you need to cook at home/ restaurant except the canned goods.<br />

We bought 1 full box of mangoes, 5lb red peppers, 25 lemons in a bag, 5 lb apples in a bag, and some sauces and cookies.<br />
<br />
Red pepper.. Yumm yumm. Mummy i want more of that red vegetable!!!! Thats what i hear whenever i make this red pepper/capsicum vegetable.So tried the red pepper chutney after seeing it in my friend Mullais's website. I did some changes and tried it, and we just loved it. My little girl asked me " Mom can you please make more of this Chutney. I love this Chutney and I love you too Mom". That made my day..<br />

I add this red veggie with the mushrooms to make mushroom red pepper masala, Sometimes i make mixed vegetable rice with the bright red veggie. Very often i add it to the Chicken stir fry and Pasta dishes Sometimes i add this to the fish curry to make it more colorful. Trust me , it does taste good. Ok ennoda kathayae sollitu iruntha appuram eppo recipe pathi sollurathu.. Let me share my recipe.<br />

To make this chutney, you need just 30 minutes of your time from start to finish.<br />

You will need:<br />

<li>1 Red Pepper / Yellow or even Orange pepper</li>
<li>1 Big Tomato / 2 small tomatoes</li>
<li>1/4 of big onion / 2 small onion</li>
<li>1/2 cup of grated coconut</li>
<li>Handful of coriander leaves</li>
<li>2 Red chilies</li>
<li>5 Garlic Pods</li>
<li>1/2 inch ginger(finely chopped)</li>
<li>curry leaves (optional)</li>
<li>Salt to taste</li>
<li>2 tsp oil </li>
</ul>

Wash the red pepper and take off the seeds and rough chop them and keep it aside. </div>

Heat a pan and add some oil to it. When its hot just add the curry leaves (optional)red chilli, onions, garlic and ginger and saute it just for 2 minutes. </div>

Now add the chopped red peppers and saute it for 5 to 7 minutes in a medium flame. </div>

Turkey Kheema wrap is a quick and easy recipe to make in less than 30 mins. You can even take it for lunch in your lunch box.. Kids friendly and Adults friendly recipe. You can easily substitute the minced turkey meat with Eggs, Minced Chicken, and Minced Beef. I learned this recipe from my sister in law Angela, when I visited her during last Christmas. Thank you Angie akka for this easy peasy recipe. I did some modification to make it Indian style. </div>

You will need:<br />

<li>1 Onion (finely chopped)</li>
<li>1 lb minced turkey meat</li>
<li>2 tbsp Crushed Ginger and Garlic (Use Mortar and Pestle to do this work)</li>
<li>2 tsp fennel powder</li>
<li>1 tsp Chili powder</li>
<li>1 tsp pepper powder (Optional)</li>
<li>1 tsp turmeric powder</li>
<li>2 tsp Cumin Powder</li>
<li>2 tsp Dry Mango Powder/ Chat Masala Powder (Optional)</li>
<li>Salt to taste</li>
<li>Few curry leaves (finely chopped)</li>

Take a frying pan and add 1 tbsp oil to it, Now add the mustard seeds to it. Allow it to splutter and add the chopped curry leaves and the onion. Saute it just for 2 minutes. Now add the crushed ginger and garlic and saute it until it gets rid of the raw smell. </div>

Reduce the flame to Low and add the Marsala powders one by one (Turmeric powder, cumin powder, fennel powder, Chili Powder). Just stir it for a minute and Increase the flame to High. <b>Procedure:</b><br />

Take pressure cooker add just 1 tbsp oil to it. Now add the minced(ground) meat along with chopped red onion, tomatoes, ginger garlic paste, turmeric powder, pepper powder, cumin powder, fennel powder, meat masala and salt. Saute it just for 5 mins. Then add 2 cups of water and cook it for 8 to 10 whistle.<br />
<br />
<b>Step 2: </b><br />
<br />
In the mean time heat a small pan/ wok and add coriander seeds, cumin seeds, whole pepper, fennel seeds and saute it in a low flame for few mins untill you get good smell. When you get good aroma, switch off the stove and let it cool for couple of mins. They dry grind it in a mixie without adding water and keep it aside.<br />
<br />
<b>Step 3: </b><br />
<br />
In a big wok(Vada chatti or cheeni chatti) add 3 tbsp oil . When it becomes hot add cinnamon stick and curry leaves. When it splutters add the home made masala and saute it just for 1 min.<br />
<br />
<b>Step 4:</b><br />
<br />
Immediately add the cooked meat and saute it untill you get nice dried texture as shown in the picture. It will take minimum 10 mins. Check for salt. You can even add more oil to it if it get sticks to the bottom.<br />

You can give it a try. Very simple to make. Just store it in a air tight container and, it will stay good for minimum 1 month.<br />

Here comes the recipe.<br />

<b>You will need:</b><br />

<li> 1½ cup All purpose flour/ Maida</li>
<li>1 Egg</li>
<li>½ cup coconut milk</li>
<li>½ cup powdered sugar (Optional)</li>
<li>1 pinch Salt</li>
<li>Oil for deep frying</li>

<b>For Sugar syrup</b>: (If you are planning to make this sugar syrup avoid adding sugar while making the dough)<br />
<br />

<li>1 cup sugar</li>
<li>½ cup water</li>
<li>2 pinch Cardamon powder </li>
</ul>
<b>Procedure:</b><br />

<b>Step 1: </b><br />
<br />
Mix the all purpose flour(Maida), sugar, cardamon, egg, salt in a mixing bowl.<br />
<br />
<b>Step 2:</b><br />
<br />
Now add the coconut milk and mix it very gently untill it forms a dough shape. You can add drops of water if you need .<br />
<br />
<b>Step 3:</b><br />
<br />
Cover the dough with a lid and let the dough rest for 15 mins.<br />
<br />
<b>Step 4:</b><br />
<br />
Heat the oil in a deep frying vessel. In the mean time, divide the dough into 2 to 3 balls and flatten it really thin sheet similar to chapathi or poori. <br />
<br />
<b>Step 5:</b><br />
<br />
Cut it into diamond size using a knife. You can even use pizza cutter..<br />
<br />
<b>Step 6:</b><br />
<br />
Deep fry the diamond cuts in the medium heat oil until it turns golden brown color.Remove from the oil and keep it in a tissue paper<br />

For this simple sugar syrup just heat the sugar, cardamon and water in a vessel to form 1" thread consistency. <br />

Cool slightly and add all the fried diamond cuts into the sugary syrup and mix it well. Cool it completely and store it in a air tight container for long shelf life.<br />

In the above picture i did not make any sugar syrup. Instead i just added sugar to the dough while making the dough, just to make my work easy. You can try that too.. </div>

<li>1 tsp pepper powder (optional) </li>
<li>½ tsp Amchoor powder (Dry mango powder) </li>
<li>2 tbsp oil (Preferably coconut oil)</li>

<li>2 tbsp finely chopped coriander leaves for garnish </li>

Take a pressure cooker and mix the minced meat, finely chopped onion, curry leaves, meat masala powder, fennel powder , ginger garlic paste, salt and the water. Mix it gently with your hands and allow it to cook for 6 to 8 whistles.<br />

Allow it to cool for next 15 mins. <br />

Step 2:<br />
<br />
Now heat 2 tbsp oil in a heavy bottom vessel. When its hot add cumin seeds and then the curry leaves, Now add the finely chopped small onions to it. Saute it for just 2 to 3 mins.<br />

Step 3:<br />

Now add the cooked meat along with the water. Check for salt and allow the water to evaporate. Wait for 2 to 3 mins. Continue to saute it, till you get the dry form as shown in picture. <br />
(If you have kids at home, you can save this soup for them)<br />

Step 4:<br />
<br />
Now add black pepper powder and the amchoor powder and mix it well. Hard boil the eggs for 20 mins de shell them, then cut it into half and keep it aside.<br />

Grind all the ingredients under the list To Grind along with some water to a fine smooth mixture and keep it aside. <br />

Heat 1 tbsp oil in a pan and add the ground mixture to it and allow it to boil for 10 to 15 mins. <br />

Now add the hard boiled eggs into the boiled ground mixture and let it simmer for 3 to 5 mins. Check for salt.<br />

Step 4:<br />

Finally in a small pan heat 1 tbsp oil and add mustard seeds, cumin seeds, ½ onion(finely chopped), curry leaves, red chillies. When everything finish splutters add this into the egg kuruma and cover the lid. Switch off the stove.<br />

Boil it in 3 to 4 cups of water until it become soft.<br /><br />Step 2:<br /><br />Peel the onion and cut into small squares. When the potatoes gets 80% cooked, add the chopped onion along with the green chillies and the garlic pods.<br /><br />Step 3:<br /><br />At this stage you can add more water if the vegetables are not fully cooked yet. If the vegetables are fully cooked add the thick coconut milk and switch of the stove . Now stir the coconut milk along with the potatoes.<br /><br />Step 4:<br /><br />Now for seasoning add oil in a frying pan and allow it to heat. When it turns hot add the mustard seeds, cumin seeds and the urad dal one after the other. When it splutters add the finely chopped onion and allow it to brown. Now add the curry leaves and add the potato stew to this. I was confused whether to go with sweets or to make come curries. Called my fried Dahlia and asked What to do with Butternut Squash. She told me to make Halwa or you can use it in the Sambhar. So i'm using Half of it in Halwa and the other half in Sambhar. Thanks Dahlia akka for your suggestion. I did exactly like carrot halwa and it taste very good. <li>1 tbsp freshly made ginger garlic paste </li>
<li>5 small onions(shallots) You can add more also for extra taste</li>

<li>½ tsp turmeric powder</li>
<li>salt</li>
<li>2 cup water (Can add more if needed)</li>

For Masala:<br />

<ul><li>2 onions(finely chopped)</li>
<li>2 tomatoes chopped</li>
<li>2 tbsp ginger garlic paste</li>
<li>2 tbsp Sakthi mutton masala or you can use(1 ½ tbsp coriander powder, 1 tbsp chilli powder)</li>
<li>½ cup diluted coconut milk or (2 tbsp coconut milk paste).. Optional ingredient</li>
<li>5 stalks of coriander leaves</li>
<li>1 cinnamon stick</li>
<li>2 cloves</li>
<li>3 cardamom</li>
<li>3 tbsp oil </li>
<li>salt as required</li>

Procedure:<br />

Step 1:<br />

Pressure cook the ingredients under first table for 3 whistle or untill its 90% cooked. Keep it aside<br />

Step 2:<br />

Heat oil in a big non stick pan. Add cinnamon stick, cardamom and cloves. Then add the onions and fry it till it become translucent.. It might take 5 to 10 mins in medium high heat. Then add ginger garlic paste and saute it for 2 mins till it get rid of the raw smell. Then add the tomatoes and saute it till the oil oozes out. Now add the masala powder along with half of the chopped coriander leaves and saute it just for a min. <br />

Step 3:<br />

Now add the cooked baby goat along with the pressure cooked soup and onions. Allow it to cook covered along with the masala for 5 to 10 mins till the cooked goat absorbs all the masala. Check for salt. Garnish with finely chopped coriander leaves. You can add coconut milk at this stage if needed.<br />

Enjoy with any variety rice like ghee rice, peas pulav, <span id="goog_1267742301744"></span><a href="http://draft.blogger.com/">fried rice</a><span id="goog_1267742301745"></span> or with your favourite rotis like naan, chapathi. <br />

You will need:<br />
<br />
<ul><li>3 big potatoes</li>
<li>1 big onion</li>
<li>5 garlic pods (chopped finely)<br />
</li>
<li>1 tbsp chopped ginger</li>
<li>1 tsp turmeric powder</li>
<li>5 to 8 green chillies( according to ur spice level)</li>
<li>4 bacon strips( cut into small pieces).. optional </li>
<li>salt per taste<br />
</li>

For seasoning<br />
<ul><li>1 tsp cumin seeds</li>
<li>1 tsp mustard seeds</li>
<li>1 tsp urad dal</li>
<li>few curry leaves</li>
<li>few coriander leaves( finely chopped)</li>
<li>3 tbsp oil/ ghee <br />
</li>
</ul>Procedure:<br />

Step 1:<br />
<br />
Chop onions, garlic, ginger, green chilli and keep it aside.<br />
Cut the bacons and keep it aside<br />
<br />
Step 2:<br />
<br />
Chop potatoes and boil it in the water till it become soft. Or pressure cook the potato untill it becomes soft. <br />
<br />
Step 3:<br />
<br />
Heat 1 tbsp oil a pan and crisp the bacon pieces. this will take 2 to 5 mins. Once the bacon is crisped, take it out and keep it aside.<br />
<br />
Step 4:<br />
<br />
In the same oil add another 2 tbsp oil also and allow it to heat. Add the mustard seeds, cumin seeds, urad dal, curry leaves. Now add chopped onions along with ginger, garlic and green chilli and saute it till the onions get translucent. <br />
<br />
Step 5:<br />
<br />
Now add the turmeric powder and saute it for a min. Add the salt<br />
<br />
Step 6:<br />
<br />
In the mean time strain the cooked potatoes. Now add the onion mixture and bacon crisp to the cooked potatoes and mash it. Check for salt. Enjoy with poori, roti.<br />

<li>¼ cup sooji/ rava <br />

<li>2 tbsp ghee/ oil</li>
<li>salt for taste</li>
<li>water to knead the dough.. just like chapathi dough</li>
<li>2 cups oil for deep frying <br />

Procedure:<br />

Mix chapathi flour, rava, salt and water together to get a soft dough. then add 2 tbsp ghee/ oil and knead the dough for 2 more mins and keep it aside. Let the dough rest for 30 minutes to 45 minutes.<br />
<br />
<br />
Make small balls as of golf ball size. Flatten each ball using the rolling pin. Using rolling pin just flatten it to a thickness of credit card.<br />
<br />
Heat oil in a pan. when its super hot add poori and immediately flicker the hot oil over the top pf poori with spatula, so that it will swell up like ball. <span style="font-family: Arial; font-size: x-small;">This take only few seconds. Flip the poori and cook the next side to get golden brown color.</span><br />
<br />
<br />

<li>1 tomato or 3 tbsp canned crushed tomatoes</li>
<li>2 potatoes (cut into bite size pieces)<br />

<li>10 to 15 fried paneer pieces<br />
</li>
<li>1 tsp red chilli powder</li>
<li>2 tsp coriander powder</li>
<li>1 tsp garam masala powder</li>
<li>1 tsp cumin powder</li>
<li>½ tsp black pepper powder<br />
</li>
<li>salt for taste</li>
</ul>For tempering:<br />
<ul><li>1 tsp cumin seeds</li>
<li>½ tsp mustard seeds</li>
<li>½ tsp fennel seeds<br />
</li>
<li>1 tsp urad dal</li>
<li>1 tsp channa dal</li>
<li>1 red chilli</li>
<li>5 curry leaves</li>
<li>3 tbsp oil</li>
</ul><span style="color: #000099;">Procedure:</span><br />

Step 1:<br />
<br />
Heat a non stick pan and add some oil. When the oil is hot add mustard seeds, cumin seeds, fennel seeds, channa dal, red chillies, curry leaves and the urad dal one after other.<br />
<br />
Step 2:<br />
<br />
Add chopped onions and saute it for 3 mins in high flame till it become light brown color. Now add the potato, chilli powder, coriander powder, cumin powder, pepper, garam masala powder and close the lid for 2 mins. Add the tomato paste at this time. Now add ½ cup of water along with salt and cover it with a lid for 3 more mins till the potato is half cooked.<br />
<br />
Step 3:<br />
<br />
Now add the fried paneer pieces and cook it till its full cooked. It will take less than 10 mins. You can add water if it started sticking at the bottom of the pan. To get semi gravy form, you have to allow the water to evaporate by not closing the lid.<br />
<br />

<br />
To get more gravy you can add ½ cup of coconut milk at the end.<br />
<br />
Yummy potato paneer gravy is ready to serve. Serve with <a href="http://viji-ny.blogspot.com/2008/01/chapathi.html">chapathi</a> <br />
