Rava Dosa / Sooji Pancakes


Rava dosa is one of the breakfast dish in India. Very simple to make, but it need some skill to spread the batter very thin in the hot pan.

Here comes the recipe..

You will need:

  • 1. 5 cups of rice flour
  • 1 cup of sooji/ rava
  • ½ cup of maida/ all purpose flour
  • salt for taste
  • water as required to form a thin batter (consistency similar to butter milk)

For tempering:

  • 1 tsp oil
  • 1 tsp ghee
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • ¼ tsp black cumin
  • ½ tsp crushed red pepper flakes / red chili powder
  • ¼ onion ( chopped finely)
  • few curry leaves (chopped finely)
Step 1:

Heat oil and ghee in pan. When its hot add mustard seeds, cumin seeds, black cumin, and then the finely chopped onions. Saute onions till it turn golden brown color. Then add the curry leave sand teh red chili flakes and switch off the heat.

Step 2:

Take another bowl and add maida, rice flour, sooji/rava, salt and water. Mix it well to get thin batter. Now add the tempered mixture to it and mix it well.

Step 3:

Heat a non stick flat pan on medium high heat. Spread the batter nicely in the hot pan. Better to start from sides of the pan and then finish it in the middle. But at Vahrehvah video i saw him sprinkling the batter over the pan using hands. I tried that and it worked for me. Apply oil on top if necessary. Turn the dosa when it turns golden brown colou. Enjoy with sambhar, chutney or with idli chutney powder

Simple Wheat Dosa


You will need:

  • 1½ cup wheat flour
  • 1 cup water
  • ½ tsp salt
  • 2 tbsp curd/ yogurt
  • ½ tsp garlic powder (optional)
Step 1:

Mix all the ingredients together to form a fine paste.

Step 2:

Heat a griddle and when it is hot just pour this batter to make dosa.


But this wheat dosa takes more time to cook than rice/urad dal dosa. Those who don't have time to make chapathi can follow this. Very easy to make and it doesn't need fermentation.

Appam/ Rice pancake


You will need:

  • 2 cup sona masoori rice/ Basmathi rice
  • 2 tbsp urad dal
  • 1 cup cooked rice(can substitute with aval/poha also)
  • 1 cup coconut milk
  • 1 tbsp sugar(can increase or decrease according to your taste)
  • 1 tsp salt

Step 1:

Soak the rice and urad dal together for 6 to 8 hours or even overnight.

Step 2:

Grind to a fine paste using water/ milk/ coconut milk. When grinding add aval/poha also. Grind it to a fine paste.

Step 3:

Allow it to ferment overnight inside oven or in a warm place.

Step 4:

Add coconut milk to the fermented mixture and mix it well. Add salt and sugar. If it it too think just grind it once again in the mixie/blender.

Mix it well and make aapam using appam thawa. You can make appam using dosa thawa also. But obviously the shape differs .


Secret of making appam perfetly is making appam in a low heat. When you are pouring appam into the appam thawa it should be very less heat. After pouring the appam rise the heat to medium high. It will get ready within a min.

Ragi Idli



You will need:

  • 1 cup whole ragi/ragi flour
  • 1 cup rice
  • 1 cup cooked rice(optional)
  • ½ cup urad dhal
  • 1 tsp fenugreek seeds
  • 2 tsp salt
  • oil to grease the idli tray

Step 1:

Soak urad dal separately in water.

Step 2:

Soak rice, ragi, fenugreek seeds together in warm water.

Step 3:

I prefer overnight soaking. Should soak it for minimum 6 to 8 hours .

Step 4:

Grind urad dal separately till it become very soft and attain paste like texture.. Add less water when grinding urad dal.

Step 5:

Grind the rice, ragi, fenugreek seeds together. Add cooked rice to this mixture if you are adding it.. Grind it to a fine paste.

Step 6:

Mix this rice, ragi mixture to the urad dal mixture. Add salt and mix it with your hands. Allow it to ferment overnight or minimum 5 hours inside the oven or in a warm place.

Step 7:

Allow water to boil in the pressure cooker or idli cooker. Grease the idli trays with oil and pour this batter onto the idli trays.



Place these trays in the cooker and cook it for 10 mins . Do not use whistle.

Serve it with idli chutney powder, lamb curry, spicy chicken curry.

Spinach Poori


You will need:

  • ½ cup wheat flour
  • ½ cup Maida flour/ All purpose flour
  • ¼ cup Sooji/ Rava
  • ½ tsp salt
  • ½ tsp sugar
  • 1 tbsp oil for kneading dough
  • milk for kneading dough(less than ¼ cup)
  • 3 garlic cloves
  • 1 inch ginger(finely copped)
  • bunch of spinach
  • 2 green chillies
  • oil for deep frying

Step 1:

To make spinach paste:

In a non stick pan just put a few drops of oil. When its hot add chopped ginger,green chillies and garlic to it and saute it till it turns golden brown color. Now add spinach and close with a lid. After 2 mins you can see that the spinach is fully cooked. Now allow it to cool for few minutes. Then grind it to a fine paste using blender/mixie. Use one cup of paste to make poori. You can make palak sausage gravy or palak paneer gravy or spinach chapathi with the remaining paste.

Step 2:
To make dough:

Sieve the maida/ all purpose flour if it has any lumps. In a mixing bowl add wheat flour, maida/ all purpose flour, sooji/rava, salt, sugar and 1 cup of spinach paste. Mix it all together. Add milk to knead the dough. Finally add 1 tbsp oil and kneadit. The dough should have the consistency similar to pizza, chapathi. Allow the dough to rest for 1 hour. Then divide the balls into small balls.



Step 3:

Flatten/roll the dough using rolling pin to get a circular shape. If you are not able to get the perfect round shape just cut it using large cookie cutter/ lunch box lid after flattening to get the perfect round shape.

Step 4:

Heat oil in deep fry pan. Better to have the flame medium. When the oil is hot just drop the flattened poori into the oil. Press with the spatula with a slotted spoon to get puffed poori. when it turns golden brown just flip it to get golden brown color in the next side too. When the poori is ready just place it in the paper towel. Enjoy with potato masala, chicken masala, palak sausage gravy, or with your favorite side dish.

Note:
  • You can use cookie cutters to get your desired shapes.
  • You can make palak panner gravy by replacing sausage with panner. Enjoy your day with a healthy breakfast. Can have this for dinner too.

Besan dosa/ gram flour omelete

After marriage i was making kara bajji's using potatoes and onions. Sometimes with eggs too. But whenever i make something with gram flour my hubby simply liked it. So thought of trying some varieties of dishes with gram flour. Once i heard from my friend that North Indian people have some dosa recipes using gram flour. So i just gave a try to make this dosa. Simple superb and perfect for gram flour lovers. It smells like omelet. I tried it without eggs but we can smell egg in that dosa. You can give a try for breakfast or as simple dinner.


Description:

This dosa is fully made with gram flour. So those who like gram flour can try this dosa. I mean those who like bonda, kara bajji, kara boondhi will surely love this recipe. It will smell like omelete.

You will need:

  • 1 cup Besan / gram flour
  • 2 tbsp Onion ( finely chopped) use food chopper or very finely chop using knife
  • 2 tbsp Tomato (finely crushed or chopped)
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • 1 green chilli (finely chopped)
  • ¼ tsp chilli powder
  • ½ cup coriander leaves
  • pinch of asofoetida
  • ¼ tsp ajwain seeds(omam)
  • 1 egg (optional)
  • salt to taste
  • water to mix (just to get dosa batter consistency)
  • oil for making dosa
Procedure:

Mix all the ingredients with water to form like a dosa batter except oil. Please don't forget to add ginger garlic paste and also to chop all the ingredients finely. Heat griddle/tawa/ nonstick pan pour a ladle of batter and roll it around to spread it evenly. Cook one side pour some oil around and turn other side to cook .When done remove and serve


You can top one side of the dosa with sliced panner or cheese to get cheese omlete.

Enjoy you besan omelete. One good thing about this dosa is , it doesn't need any side dish. Hope this makes you happy!!!!!

Spicy Bread Masala Recipe


Step 1:

You will need
  • 6 Bread slices
  • 3 eggs (optional) u can replace egg with some vegetables too
  • ½ onion (finely chopped)
  • 2 tomatoes (finely chopped)
  • 1 tsp ginger garlic paste
  • 10 cashew nuts
  • 10 raisins
  • 2 tbsp oil
  • 2 tbsp Ghee/Butter
  • 1 tbsp chilli powder
  • Pinch of turmeric powder
  • salt as required
  • few coriander leaves for garnish
Step 2:

Fry bread separately

Cut the bread slices into small pieces.



Fry it with 2 tbsp of butter for 10 mins and keep it aside.

Step 3:

Start frying the rest
Put a large non-stick frying pan over medium heat. Add 2 tablespoons of olive oil.

Add the chopped onions along with the cashews and the raisins to the pan, and fry for about 5 minutes or until the onions turn light golden brown. Stir frequently to stop the onions burning.
Step 4:

Ginger and garlic

Now add 1 tsp of ginger garlic paste. Stir well for a couple of minutes.

Step 5:

Spices
Add
½ a tsp of turmeric powder,
1 tsp of red chilli powder,
and fry for 5 minutes over low heat, stirring frequently.
Step 6:

Tomatoes
Add the finely chopped tomatoes and fry for 2 minutes.
Step 7:

Add eggs

Turn the heat low and add 3 eggs along with bread slices and start stirring . Stir in some salt. Stir continuously till you get scrambled egg like form. When they are ready, turn the heat off.

Step 8:

Garnish and Serve

Finely chop the coriander leaves onto the bread masala and serve.

My husband and I love this recipe. But as you know its very rich. But no other bread recipes can replace its taste. And its very simple to do specially after shopping nights. Enjoy!!!!!

Crispy dosa recipe

Step 1:

You will need
  • 4 cups of Basmathi rice
  • 1 cup urad dal
  • 1 cup besan flour
  • 1 tbsp fenugreek
  • 2 tbsp rava (sooji)
  • salt as required
  • water as required
Step 2:

Soak

Soak the rice and fenugreek seeds together in a separate box over night and urad dal in another box


Step 3:

Dough

In a Grinder or Blender (Mixie) blend the ural dhal till it become very soft by adding water. Urad dal has to be very soft to get very thin and soft dosa. Then grind the rice with the fenugreek and the water and then mix with the urad dal. While grinding rice add 1 cup flour and rava to it and blend it altogether. Add salt according to your taste.

Allow it to ferment for min 7 hours.


Step 3:

Frying

Heat a flat pan and make thin dosas. Fry on both sides until golden brown in color with little oil.


Banana dosa recipe

Step 1:

You will need
  • 250g all-purpose flour (maida)
  • 4 bananas, mashed
  • 1 egg
  • 75g sugar
  • 2g cardamom powder
  • 1/4 tsp baking powder
  • 1 1/2 glass milk
  • 50g oil
Step 2:

Dough

Beat the egg well and to this, add sugar, milk and mashed bananas. These ingredients can also be mixed in a blender. To the all-purpose flour, add the above banana mixture and mix well to form dosa batter. Now add cardamom powder and baking powder to the batter and mix well.


Step 3:

Frying

Heat a flat pan and make thin dosas. Fry on both sides until golden brown in color with little oil.

Handy Hint:

Add some green chillies if u like spice dosa..
