Banana Bread


A healthy breakfast which you can make it in the weekend and enjoy it the whole week. Can spread butter or jam on it for extra taste.

You will need:

  • 2 ripe bananas, smashed
  • ½ cup olive oil/ melted butter ( 1 stick)
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • Pinch of salt
  • 1½ cup wheat flour (chapathi flour)
  • ½ cup of bread flour (can substitute with All purpose flour)
  • 2 tbsp chopped nuts (silvered alomonds, cashews)
  • ¼ cup raisins
Step 1:

Preheat the oven:

Preheat the oven to 350F.

Step 2:

Making bread dough:

With a wooden spoon, mix oil into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flours last and mix. Mix in chopped nuts and raisins.

Pour mixture into a buttered loaf pan. Bake for 1 hour(Till the tooth pick come out clean). Cool on a rack. Remove from pan and slice to serve.

Chapathi


You will need:

  • 2 cups wheat flour
  • ½ cup curd/Yogurt
  • ¼ cup warm milk
  • 1 tbsp oil/ghee
  • 1 tbsp sugar
  • 1 tsp salt(can increase or decrease for taste)

  • warm water as reqd
  • Maida/ Rice flour for flattening(Rolling)

Procedure:


Mix all the ingredients together except water and rolling flour. After mixing the ingredients together just add water little by little to get dough shape. The dough should not be very hard like rock. Anyway we are going to use some maida/rice flour for rolling/flattening. So add enough water to make it a soft dough. Let it rest for 1 hour.

Make small balls as of golf ball size. Flatten each ball using the rolling pin. Using rolling pin just flatten it to a thickness of credit card.

Heat a non-stick tawa on high heat. When its hot just place the chapathi and toast each side for about 2 to 3 seconds or until slightly browned. Rub with little oil/ghee/butter on top and place them on the paper towel. Repeat the process for rest of the dough and serve hot with vegetable or non-veg gravy!!!!

This chapathi will be very soft. I made with Golden Temple chapathi flour. You can try with any brand chapathi flour.
